Guía Peñín – Wines and Mushrooms
Autumn is a season full of delicious foraged mushrooms in Spain and Guía Peñín made a list of the best wine and mushroom pairings using 5 typical dishes of the season with some of their top rated wines, including Coral Duero’s own Los Lastros.
“A dish like this calls for a very lively wine with a presence of tannins. However, we’re not looking for something overwhelming. For this reason, we have turned to a very interesting production from the Coral Duero winery, located in the town of El Pego, Zamora. It’s a wine from Toro with its continental character of depth, intensity, and structure, but crafted by a house that aims to convey fresh nuances of ripe red fruit. The Toro red grape comes from a vineyard planted in 1944 at an altitude of 758 meters, with a northwest orientation on alluvial soils. It’s a wine aged for 8 months in French and American oak barrels, which we will perfectly notice on the nose, although this won’t prevent us from enjoying the liveliness of the fruit and the perfect balance of this wine.”
